  • Eggs – 2 fresh organic eggs. (2)
  • Minced garlic – 1 tablespoon minced garlic. This is optional. Depending who is at home, I use garlic or not use it. I personally like it so I try to use it most of the time.
  • Salt – 1/4 teaspoon. I like Kosher salt. In terms of quantity, I’d like to remind you that less salt means a healthier body.
  • Cheese – This is highly optional. I use Gruyere cheese for half of the pancakes and the other half I do not use it.
  • Sour cream – This is also optional and used for garnishing your pancakes.

Here is how to make potato pancakes from leftover mashed potatoes or from fresh mash:

Step 1 – Prepare the red mash potatoes.

Step 2 – Mix the mashed potatoes with the eggs.

Step 3 – Add the flour, salt, and pepper. Mix well.

Step 4 – Pour the diced/mashed garlic and mix again.

Step 5 – Now you can add the Gruyere and do your final mix.

Step 6 – Heat up a skillet with some grape seed oil.

Step 7 – Check that your mixture is not too thin. If it is, add a little bit of flour and mix again.

Step 8 – Pour 1/4 cup batter into your skillet pan.

Step 9- Wait till golden brown on the first side and then flip the pancake. Again wait until golden brown.

Personal Trick – I usually put two to three pancakes in the hot pan. I make them small. Like this, we have the feeling to have eaten a lot of them, but in reality, we eat with our eyes first.

When done, use some sour cream as a side. It adds a little bit of flavor. Do use overused the cream though.
