Why should you know how to prepare Pad Thai recipe with tamarind paste?
There are probably dozens of reasons for this. But for me, there are mainly two highly valuable reasons.

Where can I use my pad thai recipe?
There are thousands of different ways you can use the recipe.
Probably the best one is to use your paste and mix it with noodles. You’ll end up with the world renown Pad Thai noodles. These are just succulent.
You can also use the paste in rice, some use it in purée and others in pasta. Just use your imagination.
What is critical to making a fantastic Pad Thai sauce is the use of tamarind fruit.
If you use Tamarind, then I would advise you not to buy the fruit. The reason is that it will take you too long to make the sauce from the raw fruit.
It is best for you to buy tamarind as a prepared paste. You’ll find these in jars or bottles at Asian and Indian shops and food stores.
The ingredient for the Tamarind Pad Thai Sauce
- Tamarind – Take 1 to 1.5 tablespoons tamarind paste. I use 1.5 but some of my friends prefer to use 1 tablespoon.
- Fish sauce – 3 tablespoons should be more than enough. Add or remove depending on your taste. By the way, fish sauce is also known as “Nam Pla” in Thai.
- Chicken stock – 1/4 cup. If you do not have chicken stock, you can use any other stock. I prefer chicken stock though.
- Chili sauce – 1/2 to 1 teaspoon to taste, or you can use 1/3 to 3/4 tsp. cayenne pepper, again to taste
- Soy sauce – 1 tablespoon. That’s plenty as soy sauces are a little bit salty. But it is good for your health (1)
- Brown sugar – 3 to 4 tablespoons are enough. Note that you can use any other sugar. But the brown one is healthier for you.
- Ground white pepper – 1/8 teaspoon. Note that this ingredient is not a must. You can add or remove it as it pleases you.
The Tamarind Pad Thai Sauce preparation
There are only three steps to preparing this sauce as follows:
Step 1 – Place all ingredients in a cup and stir to dissolve both tamarind paste and sugar. Make sure that the sugar melts as you mix the sauce.
IMPORTANT NOTE: make sure that you taste your sauce as you go. If you feel that the sauce is a little too sour, then add a little bit more sugar.
ANOTHER IMPORTANT TIP: In order to achieve the best results, you need to taste your Pad Thai sauce. When you do, then you should taste sweet first. This is then followed by a spicy-salty and sour last.
Step 2 – Now that you have tasted your sauce, you need to play with the flavors. To do so, you just need to add a little bit more sugar if it tastes too sour to you.
In the case you want more intense spiciness, then just add some chili. You need to remember that the sauce will taste a bit too strong at this point.
That’s normal and you want to have this. The reason is that you’ll use it in your noodles, rice or pasta.
As such, the sauce will be distributed evenly throughout your dish, and the flavors will be perfect.
Step 3 – Now it is your dish presentation time. Your Pad Thai Sauce is ready to be used. I usually prefer to store it in the refrigerator.
Like this, the flavors will be better. By the way, make sure that you seal your sauce in a container. It can be stored like this for a maximum of 2 weeks.
IMPORTANT NOTE: my Tamarind Pad Thai sauce recipe will provide you with about 2/3 cup. This is much more than enough for 9 ounces of noodles. This is enough for 2-4 people. If you need more, just double the portions.
Here is a cooking tip for Pad Hai Noodles
If you want an authentic Pad Thai Tamarind Sauce with noodles, then follow the below steps. You cannot get it wrong.
Step one – The noodles. This is probably the most important step. You do not want to boil the noodles.
What you want to do is to soak your rice noodles in hot water until they are softened. You need to check them a number of times during this step. At the end of step one, the rice noodles must be a bit firm and a little bit “crunchy”.
Step 2 – Now you can stir fry your noodles up with the tamarind sauce.
Step 3 – It is time for you to present your dish to your guests and family. Just add some chopped peanuts on top of your noodles.
You can then add a little bit of parsley or fresh cilantro (chopped). You can even add some sesame seeds.
Do not forget to add some nice Chinese tea or chamomile herb tea. Enjoy your meal.
